Most people LOVE breakfast. I like breakfast at home and rarely like breakfast at a restaurant. Two things I am a sucker for: unique breakfast ideas and bread baskets. This is almost both. I had quinoa patties at Beatrix in Chicago during my last conference and really loved all their unique breakfast options, this being one of them. It kept me full and energized.
This is also extremely versatile. Could be had for breakfast, lunch or dinner. Think, sandwich or bagel sandwich for lunch. What if it was drizzled with shiitake mushroom jus for dinner. Endless options to gussy it up or take it on the go.
Asian Quinoa Cake:
1 c quinoa ( I used red variant)
2 c water
4 sliced scallions
1 tbsp microplane/ zested ginger
salt to taste
1 tbsp sesame oil
2 eggs, beaten
1/2 c sliced chives
2 tbsp arrowroot
optional: 2 additional eggs + avocado
- Prepare quinoa using your preferred method. Combine 1 c quinoa, 2 c water, 4 sliced scallions, 1 tbsp microplane/ zested ginger, 1 tbsp sesame oil and salt to taste. Cook either on stove top or microwave till cooked. I prefer microwave because that is 1 less dish.
- Let quinoa cool to room temperature. Add 2 beaten eggs, 1/2 c sliced chives and 2 tbsp arrowroot.
- Form into patties and cook in pan with 1 tbsp of olive oil. Medium heat,
- Optional: poach eggs and slice avocado to top it
