(Good) Bacteria are so hot right now! Celebrate labor day (or any day) with these kefir popsicles. These just happen to perfect postpartum. Kefir to combat the ancef (antibiotics) that I got in the operating room. Mangos and cherries have fiber and vitamins that everybody needs, especially postpartum when you need to get those bowels moving (sorry– tmi) and replenish what that little angel
stole borrowed from your reserves.
Conclusions of this first week of motherhood:
Who knew I could survive on this little amount of sleep
Who knew I could love a little peanut so much
I feel so unproductive, there is so much involved in newborn care
Mango Kefir Popsicles
1.5 c mango
1 c frozen bananas
1/2 c kefir (I used whole milk organic lifeway kefir)
1 scoop vital protein collagen
Optional cherry outer layer:
1 c cherries pitted
1/4 c coconut water
2 pitted dates
optional granola topping
- Blend 1.5c mango, 1 c frozen bananas, 1/2 c kefir and 1 scoop collagen.
- Pour into popsicle molds
- Leave at least 8 hours, better overnight.
- optional cherry outer layer. Blend 1 c cherries, 1/2 c coconut water and 2 pitted dates. Dip the mango kefir popsicles in the cherry sauce and top with granola for a crunch!
